A Family Reunion and a Recipe!

This weekend we took a drive down to the coast for a family reunion. We only were able to go for the day, but it was so much fun! The boys had a blast playing on the beach and playing with their cousins. The food was awesome, like om nom nom awesome. As we made the almost 3 hr drive home it was near silence in the back seat. All that awesome ocean air, running against the wind, and good food made for two sleepy little guys!

As for the promised recipe, well I made this nom-tastic bean salad to take to the potluck with us. And it was a hit, we'll definitely be having it regularly as a side.

Super Mamas Bean Salad

1 can Black Beans, drained and rinsed
1 can Great Northern Beans, drained and rinsed
1 can Garbanzo Beans, Drained and rinsed
1 can corn, drained (You could also use about 2 cups fresh corn taken off the cob)
2 tomatoes diced
2 cups cooked shelled edamame,(boil in salted water for 2 minutes, drain and rinse until cool
1/2 bottle or so Italian Dressing

Mix everything together and let sit for at least an hour before serving. I made it the night before the reunion. There are really SO many options for this salad too! You could easily sub out pinto beans or kidney beans for any of the beans, add chicken, keilbasa, bell peppers, cheese chunks, etc.

  1. I am so jealous of the beach. I haven't seen the likes of a beach in about 20 years. :(

    I am not a huge fan of beans but that does sound really yummy. I may have to give it a try!
